Catching up and some cookbook recipes
So it's been a pretty eventful week here. Last Tuesday, I was in a car accident. I was by myself, thankfully, but my car has been declared totaled. Someone made the comment ;) "But it hasn't even snowed yet" lol. I was not at fault and was t-boned. I was sore and mentally exhausted for a few days and also fighting a wicked cold. I'm still fighting the cold, along with the kids now, but doing better. We got a rental van that I just love but we have to give it back on Wednesday. We'll have to figure out what to do about purchasing another vehicle but in the meantime, we have my in-laws car so that's nice.
We put the girls together for the first time last night and it didn't go well. With Avi not feelling well, she didn't settle down until about 10:30pm and she goes to bed around 7:30 pm. So this is how it was at the Cruffs last night:
Avi slept in the pack and play in the living room
Bri slept in her room but got up a couple of times, once asking for Avi and the other because her nose was stuffy.
Adam slept in the pull out upstairs because my coughing and nose blowing was bothering him about midnight.
I slept on the air mattress on our king size bed frame (still need the mattress, it's in storage but really big so we have to wait to use a truck to bring it here) and fell asleep about 3 am because I had anxiety about Avi waking up. Needless to say, ROUGH NIGHT but I'm hoping tonight is smoother. They are both in the same room and sleeping soundly (for now).
Bri and I made a really super easy recipe out of it.
Orange Yogurt Pops
1 cup of vanilla yogurt
2 cups of orange juice (don't skimp on these, we used cheap stuff and it tastes like it lol)

Easy enough.
I made another recipe out of there for Creamy Corn Chowder.
I am re-naming it the "Ain't nobody got time fa dat" Chowder. There was lots of dicing (and that's totally ok if you have the time and energy for it, this mama did not today), it had you use ears of corn (what a pain! It did taste good but next time I'll use canned corn),

It tasted fine but was more milk based than I like. It's hard to not compare it to our recipe for Chicken Tortilla Soup (totally different recipe but still). It's not only delicious but super easy.
