Thanks for stopping by. Now that I'm a semi-permanent stay at home mom, I've really enjoyed trying new recipes. Of course, Pinterest is the go-to place but sometimes Google pulls through for me.
Yesterday, I made pulled pork and broccoli slaw. It was soooo good! I went to our local meat market (Jack's) and bought what I thought was a 2 lb pork loin. After I got home, it ended up being two 1 lb. loins but it worked well all the same. I'm a picky eater although my palate expands the older I get. I am not a big fan of cole slaw so when I saw the bag of broccoli slaw, I thought I would try it. I asked Siri how to make coleslaw and he (yes, I made his voice male, lol) told me the main ingredients were cabbage, vinaigrette, vinegar, vegetable oil and mayonnaise. As soon as I saw, vinaigrette (all day I spelled it vinegarette and I don't even care, lol.) I thought of this wonderful recipe my friend Julie had made and shared with me. It was one of Ina Garten's. For the pork, I pulled different things from different recipes and just went with it. Here it is!
Crock Pot Pulled Pork (I used this to go by and added some stuff of my own:Slow Cooker Pulled Pork-Skinnytaste)
2 lb pork loin
2 tsp red wine vinegar
2 tsp liquid smoke (we had this in the fridge, I'm glad Adam didn't let me throw it away)
1 tsp garlic powder
1 tsp kosher salt (they called for sea salt but this worked fine)
1 tsp paprika
About half a 12 oz beer
18 oz bottle of your favorite BBQ sauce

I always spray my crock pot with non-stick spray, they also make
crock pot bags which I've also used before and work well.
Spray crockpot. Put in pork loin. Put above ingredients in except BBQ sauce. Cook
on low for 4 hours (it should shred at this point and if it doesn't, give it
another hour). Shred meat with 2 forks, put in BBQ sauce and cook on low for
another hour. I think my crock pot tends to cook a little hotter. It also was
2-1 lbs loins so I didn't want it to dry out. If your crock pot cooks slower or
your loin is bigger, extend the time before the shredding. Serve on hamburger
buns or rolls. Yum!
Here's the vinaigrette recipe I used for the slaw. It's great on salads too!
I bought a 12 oz bag of broccoli slaw and tossed with the vinaigrette and added about a 1/4 cup of mayo. You can add more if you want, I just eyeballed it.
Overall, dinner was a great success! Here is Avi enjoying her pulled pork sandwich. I didn't make the kids eat the slaw because the vinaigrette can be a little spicy. I might reduce the garlic and pepper next time. Thanks for reading. Stay tuned for more happenings with the Cruffs.
